James Hunt's 14-acre agave planting sits in Merced County, where the rows look less like a conventional Valley field than an argument made in leaves. The plants are built for dry country. Hunt is trying to find out whether that trait can also make them useful on a farm facing less water.
For California growers, the question is no longer just what can be planted. It is what can survive the water available under the state's groundwater rules, and whether anyone will buy it afterward. Hunt's experiment is part of a broader turn toward agave as a possible drought-tolerant crop, with liquor production among the markets being considered. A Crop With a Longer Horizon
Agave does not arrive as a plug-and-play replacement for almonds, grapes, or vegetables. It brings a different production calendar and a market that is still being assembled in California. The central attraction is its water profile: a perennial plant that may offer growers another use for land where annual irrigation has become difficult to justify.
That possibility has drawn attention beyond Merced. Researchers and volunteers have been examining agave varieties in the Valley, including a June planting event at Madera Community College involving 20 varieties. The work is aimed at the plainest of agricultural questions: which plants can handle California conditions, and what kind of crop they become after several years in the ground? Researchers are studying agave varieties and the crop's growing footprint.
The answer matters because a drought-tolerant plant is not automatically a profitable crop. Growers still need planting material, field management, harvest equipment, processors, and a buyer with a reason to prefer California-grown agave. Liquor is the most visible possibility, but turning a field into bottles requires a chain of businesses that does not appear simply because the plants do.
Agave Meets a Soft Wine Market
In wine country, agave is also being discussed against a less romantic backdrop: a wine industry downturn. Sacramento Bee reporting found vineyards considering the crop as growers look for alternatives, with California-grown agave spirits already making an appearance at a Clear Lake gathering. Vineyard owners are eyeing agave as wine conditions weaken.
That overlap gives the crop a second opening. Agave is being evaluated both as a response to water scarcity and as an answer to weaker returns in an established crop. Those are different problems, but they can push a grower toward the same field decision: leave vines or another thirsty planting in place, or try something whose economics are not yet settled.

The Field Test Comes Before the Business Plan
For Merced County growers, Hunt's acreage is therefore more useful as a field test than as a ready prescription. The planting may help show how agave fits local soils and farm operations, while the emerging research can narrow the list of varieties worth trying. Neither answers the larger commercial question on its own.
Growers considering a switch will have to price the years before harvest, confirm that a processor or distiller can take the crop, and compare the planting with the groundwater allocation available to the parcel. County conditions matter. So do the rules of the applicable groundwater basin. A crop that saves irrigation water but strands capital in a field is not much of a solution.
The agave conversation is gaining ground because the old menu is shrinking. Its success will depend less on its ability to look drought-proof from the roadside than on whether California can build the practical machinery around it: reliable varieties, harvest methods, and a buyer willing to pay for the plant after it has spent years growing.
