Agave is an unusual sight in California farm country: rigid leaves arranged like green, low-slung stars, occupying ground that might otherwise hold vines, almonds, or annual crops. In the San Joaquin Valley, those plants are beginning to look less like an oddity and more like a possible answer to a very practical question: what can still be grown when the well cannot do what it used to?
The question has sharpened under the Sustainable Groundwater Management Act, which is pressing farms to reduce pumping as aquifers recover from decades of overdraft. Recent reporting describes drought-tolerant crops as one option for Valley farms facing severe groundwater cutbacks, while researchers say crops such as agave could help preserve productive farmland as climate conditions become harsher.
A Crop for the Smaller Water Budget
Farmers are not turning to agave because the crop has suddenly displaced the Valley’s established commodities. They are exploring it because the old menu is narrowing. Under SGMA, a grower may have to choose between fallowing ground, shifting to a less thirsty crop, finding another source of water, or making a gamble on something with a thinner local market.
That gamble is tied to agave’s better-known life after the field. In Mexico, the plant feeds tequila and mezcal production; in California, farmers and entrepreneurs are considering whether a domestic supply could support agave spirits closer to home. The Sacramento Bee reports that some wine grape growers are examining the crop as the wine market struggles with excess supply and weakened consumer demand, giving agave a second argument beyond water use.

Viers’ description is the plain arithmetic beneath the crop experiments. Pumping has exceeded replenishment, contributing to dry wells and subsidence. A plant that can remain viable with less irrigation may protect the value of land, but it cannot by itself repair an aquifer or satisfy a groundwater sustainability plan.
From Vineyard Rows to Agave Fields
For grape growers, the timing is especially awkward. The wine industry is already dealing with too much supply, so replacing vines with another crop is not simply a water calculation. It is a bet on whether a buyer will exist when the agave is ready, whether a processor will be close enough to make hauling pencil out, and whether the crop can become more than a novelty at the farm gate.
That is why the current interest is better understood as field-level experimentation than a Valley-wide conversion. California farmers are looking to agave as a new revenue stream as groundwater restrictions take hold, but the reporting also points to the need to localize the supply chain. A water-saving crop still needs somewhere to go.
For San Joaquin Valley operations, the near-term consequence is a more complicated crop plan. Agave may fit parcels where annual crops no longer fit the available water budget, and it may offer vineyards a possible alternative during a difficult sales cycle. But the economics remain tied to a young California industry, and the central tradeoff has not disappeared: less pumping may preserve acreage, while an unfamiliar crop adds market and timing risk.
The next decision is local, not theatrical. Each grower’s groundwater sustainability agency will continue translating basin limits into allocations, pumping rules, and project requirements. Those decisions will determine which parcels face the hardest choices—and whether agave moves from demonstration fields into a durable part of the Valley’s cropping pattern.
